Ranch Chicken Tacos (Crock Pot)

Crock Pot
  • 1 lb chicken breast (boneless skinless)
  • Ranch Seasoning (Home Made recipe below)
  • Taco Seasoning (Home Made recipe below)
  • 1-2 cups chicken broth
  • S & P

Place chicken breast in crock pot. Add 1 cup of chicken broth. Sprinkle 1-4 tablespoons of each ranch and taco seasonings. Cook on low for 2-6 hours. Remove cooked chicken and shred. Return to crock pot and mix with the cooking liquid, seasoning with salt and pepper to taste. If it looks dry add a little more broth. Serve in taco shells with beans (black or refried), cheese, sour cream, salsa, lettuce, tomato, onion, avocado, and hot sauce.

*You can also use the chicken to make quesadillas, burritos, nachos, or burrito bowls.

*For a quick way to shred the cooked chicken put in your kitchen aid mixer with the paddle attachment. The longer you mix the more shredded it will be.

*You can cook the chicken from frozen, low and slow.

*I do not use a lot of the taco seasoning because our kids don’t like it to spicy and the ranch adds the little extra flavor you need. This is a great recipe to feed a crowd. I like using the homemade seasoning because you can use as much or little and don’t feel obligated to use all or throw away the package. I also like to pair with refried beans it adds more protein and a creamy texture you didn’t know you were missing.

Home Made Ranch Seasoning
  • 4 Tbsp dried parsley
  • 4 tsp garlic powder
  • 4 tsp onion powder
  • 4 tsp dried onion flakes
  • 3 tsp dill weed
  • 2 tsp dried chives
  • 2 tsp salt
  • 2 tsp black pepper

Mix together and store in an airtight container

Home Made Taco Seasoning
  • 1 Tbsp Chili Powder
  • 1 1/2 tsp ground cumin
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp dried oregano

Mix all ingredients together and store in an air tight container
